I found myself in a morning rut of being too sleepy to really put together anything very enjoyable, and realized I was eating a lot of frozen waffles and “foods on the go” that I was mindlessly eating due to lack of brain power and ease. I challenged myself to put together easy breakfasts that included delicious foods that kick started my day nutritionally, but also woke me up because they were exciting (*cue exit music for that soggy waffle)..
This recipe was one of my all time favorites, and you can make it the night before and put it in tupperware so it’s saved nicely in the fridge overnight. It combines delicious coconut yogurt with fresh seasonal fruit (my favorite were the juicy blackberries and peaches). So creamy, bursts of fresh fruit and drippy honey… excuse my drool.Print
