I found myself in a morning rut of being too sleepy to really put together anything very enjoyable, and realized I was eating a lot of frozen waffles and “foods on the go” that I was mindlessly eating due to lack of brain power and ease. I challenged myself to put together easy breakfasts that included delicious foods that kick started my day nutritionally, but also woke me up because they were exciting (*cue exit music for that soggy waffle)..
This recipe was one of my all time favorites, and you can make it the night before and put it in tupperware so it’s saved nicely in the fridge overnight. It combines delicious coconut yogurt with fresh seasonal fruit (my favorite were the juicy blackberries and peaches). So creamy, bursts of fresh fruit and drippy honey… excuse my drool.

Ingredients
- ½ C vanilla coconut yogurt
- ¼ C fresh blackberries (strawberries and blueberries)
- ¼ C fresh peaches (also great with nectarines)
- A drizzle of honey (local is great for combatting seasonal allergies)
- 1 tbsp. flaxseeds
Instructions
- Fill container with yogurt
- Drizzle with honey
- Top with your favorite fruit
- Drizzle with honey again
- Top with flaxseeds
Notes
*If you are storing this overnight, I like to have my flaxseeds waiting for me on the counter and adding them in morning of. That helps them to stay nice and crunchy.
