Lasagna Soup

Ingredients

Scale
  • ½ lv lean ground beef
  • ½ lb ground italian sausage
  • Salt and pepper to taste
  • 1 yellow onion chopped
  • 1 tbsp olive oil
  • 3 cloves chopped garlic
  • 2 tbsp tomato paste
  • 24 oz marinara sauce
  • Sprinkle of red pepper flakes
  • 2 tbsp chopped parsley
  • ½ tsp dried basil
  • 7 cups chicken broth
  • 8 lasagna noodles broken in pieces
  • 2 cups fresh spinach leaves
  • 10 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated parmesan cheese
  • Fresh basil for serving


Instructions

  1. In a large pot, cook ground beef and sausage until browned. Season with salt and pepper. Drain grease and remove from the pot.
  2. In a large pot, heat olive oil and toss in diced onion and saute for 5 minutes. Add in minced garlic and book for another 2 minutes.
  3. Stir in tomato paste, marinara sauce, spices and broth. Return meat to pot.
  4. Bring to boil then add lasagna noodles to pot and reduce heat to low and cook until noodles are tender. Add spinach.
  5. In a small bowl, mix together mozzarella, ricotta and parmesan cheese.
  6. Serve soup in bowl and garnish with a scoop of cheese and garnish with fresh basil.
