Ingredients

Scale

Salad:

  • Cherry tomatoes, likely both red and yellow varieties
  • Small mozzarella balls (bocconcini or pearls)
  • Blueberries
  • Pecans and possibly pine nuts
  • Green leafy vegetables and fennel fronds
  • Two pieces of toasted bread or croutons

 

Salad Dressing:

  • 1 large shallot
  • 2 tbs sherry viegar
  • 1 tbs warm water
  • 1 cup extra virgin olive oil
  • 1 ½ tsp local honey
  • 1 ½ tsp dijon mustard
  • 1 tsp whole grain mustard
  • 1 thyme sprig washed and finely chopped
  • 1 garlic clove finely chopped
  • 1 tsp kosher salt
  • 1.2 tsp ground black pepper


Instructions

Place all ingredients in a ball. Top with dressing, fennel fronds, and toasted bread or croutons. Pairs well with a glass of sauvignon blanc!
