Salad:
- Cherry tomatoes, likely both red and yellow varieties
- Small mozzarella balls (bocconcini or pearls)
- Blueberries
- Pecans and possibly pine nuts
- Green leafy vegetables and fennel fronds
- Two pieces of toasted bread or croutons
Salad Dressing:
- 1 large shallot
- 2 tbs sherry viegar
- 1 tbs warm water
- 1 cup extra virgin olive oil
- 1 ½ tsp local honey
- 1 ½ tsp dijon mustard
- 1 tsp whole grain mustard
- 1 thyme sprig washed and finely chopped
- 1 garlic clove finely chopped
- 1 tsp kosher salt
- 1.2 tsp ground black pepper
Instructions
Place all ingredients in a ball. Top with dressing, fennel fronds, and toasted bread or croutons. Pairs well with a glass of sauvignon blanc!
