- ½ lv lean ground beef
- ½ lb ground italian sausage
- Salt and pepper to taste
- 1 yellow onion chopped
- 1 tbsp olive oil
- 3 cloves chopped garlic
- 2 tbsp tomato paste
- 24 oz marinara sauce
- Sprinkle of red pepper flakes
- 2 tbsp chopped parsley
- ½ tsp dried basil
- 7 cups chicken broth
- 8 lasagna noodles broken in pieces
- 2 cups fresh spinach leaves
- 10 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup freshly grated parmesan cheese
- Fresh basil for serving
Instructions
- In a large pot, cook ground beef and sausage until browned. Season with salt and pepper. Drain grease and remove from the pot.
- In a large pot, heat olive oil and toss in diced onion and saute for 5 minutes. Add in minced garlic and book for another 2 minutes.
- Stir in tomato paste, marinara sauce, spices and broth. Return meat to pot.
- Bring to boil then add lasagna noodles to pot and reduce heat to low and cook until noodles are tender. Add spinach.
- In a small bowl, mix together mozzarella, ricotta and parmesan cheese.
- Serve soup in bowl and garnish with a scoop of cheese and garnish with fresh basil.
